Watermelon Gummies

Healthy sweets! We have started making healthy versions of sweets which are quick to make, taste fresh and smooth and are not full of nasty chemical ingredients. Get yourself some fun moulds, a packet of gelatine and a pipette and you're away. They set really quickly and the kids can eat as many as they like without you waiting for the normal onset of the artificial sweetener high that comes with commercial sweets. We did watermelon but you can use any juice you fancy. The watermelon we had wasn't a particularly flavoursome one and the gummies were therefore not very strong tasting so we are looking forward to experimenting with some different juices. Get creative!

Ingredients: The juice of your choice. We used around 2 cups of blended watermelon. Use 2 cups of any juice you like.

The juice of half a large lemon.

1-2 tbsp runny honey. (The weak watermelon flavour needed 2 but if you're using stronger juices you could get away with 1.)

4 tbsp gelatine powder. (I use a really good one that is jam packed with essential nutrients that will in essence make these a health food, but this can be expensive, so any gelatine powder you can get will work if you want to try these for fun.)

Method: If using watermelon, blitz the fruit in a food processor, then sieve into a bowl. (You can also use shop bought juice direct from a carton if you're wanting less washing up!)
