These are my new favourite no bake treat! You can have them with or without the chocolate shell but trust me, the chocolate outer really does make these an utter delight to eat! They're somewhat addictive! 

 

They have no added sugar, butter, eggs or flour and are made with 5 very simple, healthy ingredients! (Chocolate aside!) Yet somehow,  they have that deep chocolate taste, unmistakable fudgy squish and the same texture as a brownie. I love them (So much so I eat several in one go.) 

 

To make them really good quality, I used organic ingredients but I know this can be expensive so use what you have. I take advantage of buy one get one frees and reduced deals to make sure I can eat the best quality but for an affordable price. 

Ingredients: 250g Organic Pitted Dates, x1 entire 170g jar of smooth Organic Tahini (Use the oil too, don't waste it, it will help to bind them!), 5 flat tbsp Organic Cocoa Powder, 1/2 a flat tsp of good quality salt ( I use Celtic Grey Salt), 1-2 tbsp good quality honey (depending how sweet you like it) and 1-2 tbsp water to bind the mix as it was too crumbly to start with. Add a bit at a time until the mix has come together.

 

Buying Tips: Holland and Barrett are amazing at offering things at either reduced sticker prices or on offer. My pitted dates were buy one get one half price, so I have extra in stock for next time. They also stock the Biona Organic Tahini I used. 

 

Salt matters: It is a myth that salt is bad for you! Yes, highly processed salt is, but a good quality unrefined salt is full of minerals and electrolytes. And really boosts the flavour! Don't be afraid! I buy mine from Amazon and it lasts ages. 

Method: Mix everything in a food processor. That is it. It may take a few minutes but should come together a bit like a crumbly dough. If it looks like it wont stick together when pressed down, add water bit by bit. You want it to be able to press together and set into a flat piece you can easily cut into bars. 

 

Press the mixture into a tin or ceramic dish that is lined with baking paper so that it doesn't stick. Press it all down to your desired thickness and put it in the fridge overnight. I find it is best to leave it for a full night so they are really firm to cut but if pushed for time, a few hours will do. 

Then cut into squares or bars. This mix made about 10-12 decent size squares. You can make them larger or smaller to suit.

Eat them as they are or melt chocolate to dip them in and coat. Leave to set on baking paper. 

They make a great gift and will keep for a good 5 days in an airtight bag or container.
