I make these a lot. Everyone can make a flapjack, but standard ones call for golden syrup, so I swap it out for pure raw honey, which isn't cheap, but is worth the swap, both for the taste and the health benefits. Use whatever honey you have though. Dates also add sweetness in place of refined sugar. The basic mix can be adapted to use up whatever nuts, seeds or fruits you have around the kitchen. Very easy to make and really satisfying to eat. 

Ingredients: 250g Oats, 200g unsalted butter, 200g honey, 200g pitted dates (chopped), 50g dried apricots (chopped), 50g pecan nuts (broken up roughly), 50g sunflower seeds, a pinch of good quality salt.

 

 

 

 

 

 

 

 

 

Method: This recipe is so easy the kids could do it with you (or for you!)

Melt the butter, honey and chopped dates in a large pan on a medium heat. At this starting point, add a small pinch of good quality salt (I use celtic). The dates will start to go a bit mushy and soft, which is what you want.

Once everything is melted and the dates are sticky and breaking up, remove the pan from the heat and stir in your oats. Then add the chopped apricots, sunflower seeds and pecans. 

Give everything a good stir until combined and pour the mixture into a lined baking tin and bake in the oven at 180°c/Gas 4 for around 20 minutes or until the mix is nicely golden on top. Leave to cool completely before cutting. Cut into squares. These will keep for around 5 days in an airtight jar or tin.
