These are delicious! I love truffles!
The heavy cream and sugar content in standard ones means that they are an occasional treat. However, these are a pretty good alternative with only the outside being dipped in chocolate and the actual truffle itself being full of nutritional goodness from the fruit and nut mix. They make a great snack for energy too.
Ingredients: 50g Walnuts, 50g Whole Almonds, 100g Cashews, 150g Pitted Dates, 1/2 a flat teaspoon of good quality salt (I use Celtic Grey Salt), 100g of smooth peanut butter (try and use the ones without added ingredients, just peanuts if possible!) and 3tbsp as you go of water to help with the mixing.
Toppings: 150g chocolate of choice and whatever you want to decorate with. I used freeze dried raspberries. Pistachios work too.
Method: Put everything into a food processor and mix. I love a recipe that is just that easy.
My mini chopper is sadly not really fit for purpose but I hope to invest in a processor this year. If like me you are working with what you have, don't let having to make a little more effort put you off.
Adding the water 1tbsp at a time will really help to bring the mix together, whatever you are using.
You will end up with a nice firm dough like mass of sticky stuff! Turn it out onto baking parchment and roll into individual balls at your preferred size.
Tip: Wetting your hands slightly can help with preventing the mixture from sticking to them.
Lay them on parchment ready to be coated with the chocolate. You can of course stop here and eat these perfectly guilt free, healthy energy balls. Or continue to turn them into chocolate truffles.
Melt the chocolate and dip in the balls until coated evenly.
Put them on baking parchment and tip over any excess chocolate.
Add topping of choice whilst the chocolate is still wet so that they set on top.
Put them in the fridge for at least an hour before eating.
Tips: These make lovely gifts too! I found some bags to display them in and gift out to family recently for birthdays. By adding a little handmade sticker, they thought I had bought them rather than made them. It is such nice feedback when people enjoy what you make.
Baking paper/parchment is your best friend! My first batch was set on a plate and I then had to gauge them off one by one with a knife! Good quality, unbleached paper is good for the food and means they wont stick.
